Sustainabality & Aster

At Aster we believe in making decisions that demonstrate a committment to eco-friendly business practices, and reducing the shop's carbon footprint.

We work to continually make operations decisions which minimize our impact on the environment and maximize global awerness. We accomplish this in our day to day operations by composting & recycling all eligible waste; and encouraging our customers to help in the effort. We make every effort to minimize our use of packaging in preparing to go items. We choose our coffee roasters based on their commitment to a sustainable and fair coffee industry. Our coffee roasters work with the best farms. Meaning that they consistently delivery a quality product; grown and harvested through sustainable farming practices.

Aster was constucted in keeping with sustainable building principles. This started at the begining of the process by utilizing as much reused building materials as possible in the construction of the space.  We have countertops which were made from slate chalkboards out of Roosevelt high school. Vintage mid century modern wooden lounge chairs were lovingly collected from antique shops, craigslist, and Ebay. The table tops were a total score consisting of a large cache of solid wood table tops covered in lacquer from who knows which old restaurant found in a pile for cheap at an architectural salvage store. Stripped & refinished to bring out the beauty of the wood, you would never guess how they looked when we found them. The dining chairs were purchased from another restaurateur who no longer had a restaurant for them.

When repurposing wasn't feasible, choices were made to purchase and use low impact products like the faux leather used for the lounge chair cushions which was PVC free. Low VOC paints were used for the walls and ceiling.  The carpenter who built all the cabinetry worked to efficiently cut the wood so we had as little waste as possiblle, in some cases tweaking the design to maximize the wood efficiency. The carpet floor tiles we installed to soften the floor, are made with 41% post-indusrtial recycled content.
